Baked Potato Soup

It hasn't really been cold around here, but I always enjoy soup! I love making this soup so much! It may just be my favourite! So here it is for you to enjoy in your own kitchen!
~Potato Soup~




What you'll need :
~ 6 large potatoes
~ 3 tablespoons of butter {*unsalted}
~ 1 1/2 cups of finely diced onion
~3 cloves of garlic, minced
~ 1/2 cup of celery, diced
~ 3 tablespoons of flour
~ 2 cups of chicken stock {*low sodium}
~ 4 cups of milk {*1%}

Optional toppings:
~2 bacon strips, cooked and crumbled
~ 3 tablespoons of scallion's, chopped
~ 1 cup of shredded cheese


{* To help keep away that junk in your trunk ;)}

Step by Step:

~Peel potatoes.




~Cut into 1 inch cubes {or smaller, depending on your own preference}.

~Heat butter or margarine over medium, in a large sauce pan until it's melted and frothy.

~Chop onions finely, add into sauce pan, and cook for two minutes.

~Add Chopped celery, and garlic into sauce pan and continue cooking for 3 minutes, stirring every time you get a free second!

{lower the heat slightly so the vegetables don't brown, like my'n did!}

~Add the flour to the sauce pan and stir with a WOODEN SPOON, cook for 2 minutes. {Make sure to scrape the spoon around the edges and on the bottom of the sauce pan}

~Whisk in the stock SLOWLY, until it's all in there.

~Add your chopped potatoes.

~SLOWLY add the milk.

~Cook for 20 minutes over medium to low heat {do not boil!}

~Stir every so often.

~While your soup is cooking shred yo' cheese {hello new saying!! "shred yo' cheese"}

{If you're the type of person who prefers a smoother soup, throw it into a blender and puree it!}

~Sprinkle yo' cheese over yo' soup, and serve with a slice of my mom's dill bread! {Recipe coming soon!}
